Wild Blueberry Tartlets


 Ingredients:
  • 1/2 cup whipping or heavy cream
  • 2 tablespoons sugar
  • 1/3 cup Stonewall Kitchen Wild Maine Blueberry Champagne Jam or Wild Maine Blueberry Jam
  • 4 ounces Mascarpone cheese, room temperature
  • 30 mini Phyllo cups (prebake follow package instructions)
  • Garnish-small blueberry, candied lemon peel, or whipped cream with a small mint leaf.

Directions:
Whisk cream and sugar until soft peaks form.  Gently heat Stonewall Kitchen Wild Maine Blueberry Champagne Jam or Wild Maine Blueberry Jam in a small saucepan or in the microwave making sure it is smooth, but not too hot.  Combine Mascarpone cheese and jam until uniform. Fold in whipped cream.  Place blueberry filling in a pastry bag fitted with a large tip. Fill each pastry cup. Garnish with a small blueberry, candied lemon peel, or whipped cream with a small mint leaf.

Soundview Millworks has been producing equestrian and nautical inspired handcrafted carving, cheese, cutting boards and home accessories out of Mahogany and Maple woods with stainless steel boat cleats or horse bits since 2008. Owner, craftsman, and designer Grant Tankoos makes everything in his hometown of Darien, Connecticut and his hand-on approach with every piece ensures a top-quality and aesthetically pleasing product meant to be displayed as well as fully functional.


All of our products are customizable with corporate logo, a wedding invitation, monogram, or choose from over 50 stock images -- the possibilities are endless!

  • 1 5.3 ounce container of goat cheese
  • 1 jar Stonewall Kitchen Red Pepper Jelly
  • Stonewall Kitchen Down East Crackers (optional)
  • Garnish with cilantro leaf

  1. Smear goat cheese on Stonewall Kitchen Down East Crackers.
  2. Put a strip of Red Pepper Jelly down the center of the cracker. Garnish with a cilantro leaf.

Cooking with Tea

For centuries, teas have been very versatile.  Not only can you enjoy a great cup of tea but they are great source of flavoring and nutrition in wonderful recipes.  Here is one that we found to be perfect to enjoy with a great cup of tea from Tea Forte'.  Enjoy!

Blueberry Black Currant Tea Cake

1 cup milk 
3 Black Currant pyramid infusers
2 cups sifted flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup vegetable shortening
1 1/4 cup sugar
1 large egg
1 teaspoon vanilla
1 cup fresh blueberries, room temperature

In a small saucepan, heat milk just to the simmer. Off heat, add the Black Currant pyramid infusers, submerging them completely. Set mixture aside to cool. When cool, remove infusers, squeezing them to remove liquid.

Adjust rack to lower third of oven and preheat oven to 350 degrees. Grease and flour a 9-inch square cake pan.

Sift the flour, baking powder, and salt. Using an electric mixer at medium speed, cream the shortening and the sugar to blend thoroughly. Add the egg and vanilla and beat until light and fluffy, about 4 minutes. Add the flour mixture alternately with the steeped tea-flavored milk mixture in three or four additions.

Fold in blueberries and spoon batter into pan. Bake for 25 to 30 minutes or until cake springs back when lightly pressed in center. Cool on wire rack 10 minutes before inverting.

CheddarQuiche
1 1/2 cups all purpose flour
1 stick cold unsalted butter
1 large egg
1/3 cup ice water
 24 oz extra-sharp Vermont Cheddar cheese, grated and divided into thirds 
8 oz of desired quiche filling (bacon, ham, veggies, etc.)
8 eggs
2 cups cream
3/4 tsp salt
1/4 tsp black pepper

 Preparation:

Preheat oven to 300 degrees.
Cut butter into small pieces.
Using a pastry blender or two knives, cut the butter into the flour until the mixture resembles coarse crumbs.
Add egg and ice water and mix until dough forms.
Turn the dough onto a lightly floured surface and let rest for 20 minutes.
Roll out the dough to a circle a bit larger than the baking dish.
Line the baking dish with the dough and crimp the edges.
Regrigirate the dough-lined baking dish for at least 1 hour.
Fill the dough-lined baking dish with one-third of the grated cheese.
Place filling of your choice on top o the cheese.
Layer the remaining two-thirds of the grated cheese on top of the filling.
In a separate bowl, mix eggs and cream together and season with salt and pepper.
Create a well in the center of the cheese and filling mixture in the baking dish and pour in the egg mixture.
Place the dish on a baking sheet and bake for 1 hour, or unit done.
Rotate the tray and baking dish, and cook for an additional 45 minutes, or until set.
Allow the quiche to rest for 10 minutes, then serve immediately.
